Half-man, half-bull, all anger — Percy's first monster fight, killed with its own horn. It keeps reforming and coming back, which is very on-brand for Greek mythology.
The Minotaur attacked Percy, Grover, and Sally on the way to Camp Half-Blood. It grabbed Sally and she dissolved in golden light (actually captured by Hades). Twelve-year-old Percy, in his first-ever monster fight, ripped off the Minotaur's horn and stabbed it to death with it. He kept the horn as a trophy. The Minotaur is Percy's recurring enemy — it reforms from Tartarus periodically and Percy has to kill it again. Each time, it's slightly more annoyed.
Enormous — seven feet tall with the body of a muscular man and the head of a bull. Horns like curved swords. Tighty-whities (yes, really — Percy noticed). It smells like a combination of livestock and fury.
